How do I update inkdrop to use the latest mermaid version (8.8.0) ?

Thank you for the question.
You can’t update the mermaid version to the latest manually.
The mermaid plugin currently depends on 8.4.4.
Can you please tell me why you want to update it to 8.8.0?
